Organic Ragi Panwich (Finger Millet Pancake Sandwich)

For Organic Ragi Pancake Batter

1/2 cup Organic Ragi flour (Organic Finger Millet Flour)

1/2 cup Organic Whole Wheat Flour

1 large Banana, mashed / 3 tsp. of Granulated Sugar

1 teaspoon Baking Powder

A pinch of Organic Salt

1 Egg whisked (Or Flax meal - Egg Replacer)

Oil for cooking


For Panwich

1 teaspoon Butter or Margarine

1/4 cup shredded reduced-fat Cheddar Cheese

2 teaspoons Water

2 Eggs

1/4 cup shredded reduced-fat Cheddar Cheese

Bacon/Any Meat/ Hash Brown slice (your choice)

1 teaspoon of Cream of Soup & Sour Cream (if using Hash Brown)


  • Combine all the ingredients listed under Organic Ragi pancake batter in a large mixing bowl (batter should be of pouring consistency but not watery or even too thick).
  • Heat a skillet greased with a little oil on medium heat.
  • Once heated, pour a ladle or 1/4 cup of pancake batter on to the skillet.
  • While the pancake is cooking on medium heat, you will notice the top side begins to get bubbles. Air pockets will slowly get steamed and cooked. At this point flip to the other side and allow it to cook for about 30 seconds.
  • Flip again and place cooked pancakes on cookie sheet.
  • Continue the same with remaining batter and grease the skillet with oil after each batch.
  • Meanwhile, in small bowl, beat the eggs and water with fork or wire whisk.
  • In non-stick skillet, heat butter over medium heat. Pour egg mixture into skillet; cook until top is almost set. Gently lift edges to allow uncooked egg to flow underneath; continue to cook until set. Top with cheese. Remove from heat. Cut into 4 wedges.
  • Place bacon/meat slice in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside or prepare the cheesy hash browns slice where the hash brown is baked with cream of soup, sour cream and cheese; as an alternative to meat.
  • To assemble each Panwich, top 1 pancake with egg wedge, meat/cheesy hash brown slice and another pancake.
